Chocolate-covered strawberries are possibly the most romantic confection in the world. We invite you to learn how to make your own romance. Nine red, luscious strawberries. Eight ounces of fine tempered chocolate of your choice (dark, milk, or white) for dipping. A cornet of chocolate in either the same or a contrasting type for drizzling on top. Other Valentines ingredients such as caramelized hazelnuts and red & white hearts for sprinkling. A beautiful gift box for taking them home. (What happens after that is up to you.) TRUFFLES

Enrobe and decorate 16 filled truffles in the fine tempered chocolate of your choice (dark, milk, or white). Top your truffles with red & white sprinkles, Valentines plaquettes, and hand-molded red and white chocolate letters that spell "X O X O," "LUV U," and "KISS." CHOCOLATE BARS

Choose dark, milk, or white chocolate (or pick two) with which to hand-pipe 6 of your very own chocolate bars. Decorate and personalize your bars with caramelized hazelnuts, red heart sprinkles, freeze-dried strawberries, mini Cupids molded from red chocolate, and pink strawberry crisp pearls. Then spell out your affections in chocolate with hand-molded red and white chocolate letters that spell "I LUV U," "X O X O," and "BE MINE." Or request any other letters to spell your own special Valentine's message. (additional letters $1 each, while supplies last).

Voilàllipops

$68 per person

Select from dark, milk, or white chocolate (or pick two) with which to hand-pipe 10 round or heart-shaped chocolate Voilàllipops. Choose from Valentine's themed cocoa butter transfer sheets that will cover one side of each Voilàllipop with an amazing design, like magic. Decorate the other side of each pop with your and your sweetheart's initials made from molded chocolate letters, plus your choice of toppings and ingredients, such as pink strawberry crisp pearls or tiny red and white hearts. Each Voilàllipop gets its own clear sleeve and a chocolate brown ribbon - perfect for giving to your favorite Valentines.

This is the only time you'll actually enjoy having your heart broken. Choose dark, milk, or white chocolate (or try all 3) with which to mix and pour heart-shaped chocolate bark. Add your favorite ingredients, such as caramelized hazelnuts and heart-healthy cacao nibs. Spread out your chocolate in a heart-shaped bark mold (using one of our fun, bright red silicone spatulas) with Valentine's themed transfer sheets that will cover one side of your bark with an amazing design. Then, take your chocolates home in a gift box. Eat your heart out!
